Here's a recipe to whip up your own Chicken Manchurian adventure:
Ingredients:
For the marinade:
500g boneless, skinless chicken, cubed
1 tbsp soy sauce
1 tbsp ginger-garlic paste
1 tsp red chili powder (adjust to your spice preference)
1/2 tsp black pepper
1/4 tsp salt
1 egg, beaten
For the coating:
3 tbsp cornflour
2 tbsp all-purpose flour
1/2 tsp salt
For the gravy:
2 tbsp vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 inch ginger, minced
1 green chili, chopped (optional)
1 bell pepper, chopped (optional)
1/2 cup tomato ketchup
1/4 cup vinegar (white or rice)
1/4 cup soy sauce
1 tbsp sugar
1 tsp red chili powder
1/2 tsp black pepper
1 tbsp cornflour mixed with 3 tbsp water (slurry)
Chopped spring onions for garnish
Instructions:
1. Marinate the chicken:
Combine all marinade ingredients in a bowl, add chicken, and mix well. Cover and refrigerate for at least 30 minutes.
2. Prepare the coating:
In a separate bowl, mix cornflour, all-purpose flour, and salt.
3. Heat oil for frying:
In a wok or deep pan, heat oil over medium-high heat.
4. Coat and fry the chicken:
Dip marinated chicken pieces in the coating mixture, ensuring even coverage. Shake off excess and carefully add to the hot oil. Fry in batches until golden brown and cooked through. Drain on paper towels.
5. Make the gravy:
In the same pan (with some leftover oil), saute onion, garlic, and ginger until fragrant. Add green chili and bell pepper (if using) and cook for another minute.
6. Simmer the sauce:
Add ketchup, vinegar, soy sauce, sugar, red chili powder, and black pepper. Bring to a simmer and cook for 2-3 minutes.

For a drier version, skip adding the cornflour slurry to the gravy.
